Once you're in Accessibility, look for Display & Text Size. Tap it to open the display customization options where grayscale is located.

Step 1 - Open Control Center
Press and hold anywhere on the Control Center screen to open customization mode.
Step 2 – Tap the Add a Control button at the bottom of the screen

Then in the Search Controls, type Color to find Color Filters and add it.
